Das Ausmass der Ver\u00e4nderung h\u00e4ngt dabei unter anderem von der Art des Lebensmittels, der Kochmethode, der Dauer des Kochvorgangs und der Temperatur beim Kochen ab. Je nach Kochmethode kann es dabei zu unterschiedlichen Gewichts- und N\u00e4hrstoffver\u00e4nderungen kommen.<\/p>\n<p>Der N\u00e4hrstoffgehalt eines gekochten Lebensmittels oder zusammengesetzten Gerichtes kann entweder analysiert oder berechnet werden. Analysieren hat den Vorteil, dass es genaue Werte liefert. Analysen sind jedoch anspruchsvoll, aufw\u00e4ndig und teuer. In der Praxis wird der N\u00e4hrstoffgehalt eines zubereiteten Produktes deshalb meist mit Hilfe von durchschnittlichen Verlust- und Aufnahmefaktoren berechnet. Dies gilt auch f\u00fcr die Schweizer N\u00e4hrwertdatenbank.<\/p>\n<p>Beim Berechnen des N\u00e4hrstoffgehaltes eines zubereiteten Lebensmittels m\u00fcssen zus\u00e4tzlich zu den N\u00e4hrstoffverlusten auch allf\u00e4llige Gewichtsver\u00e4nderungen ber\u00fccksichtigt werden. Nimmt das Gewicht ab, entspricht dies einer Konzentration. Der Gehalt an Vitaminen und Mineralstoffen pro 100 g eines gekochten Lebensmittels kann deshalb trotz N\u00e4hrstoffverlusten h\u00f6her ausfallen als jener des entsprechenden rohen Produktes. Umgekehrt entspricht eine Gewichtszunahme (z.B. beim Kochen von Teigwaren) einer Verd\u00fcnnung und der N\u00e4hrstoffgehalt pro 100g des gekochten Lebensmittels ist deutlich geringer als jener des ungekochten trockenen Lebensmittels.<\/p>\n<\/div><div class=\"fusion-clearfix\"><\/div><\/div><\/div><div class=\"fusion-layout-column fusion_builder_column fusion-builder-column-2 fusion_builder_column_1_6 1_6 fusion-one-sixth fusion-column-last heading-section\" style=\"width:16.666666666667%;width:calc(16.666666666667% -
